Not only do eggs contain iron and high-quality protein, they are also an excellent source of eight essential nutrients, including lutein and choline, which are critical for proper brain development in infants and children. Look for omega-3-enriched eggs, which can also help increase your baby’s intake of these essential fatty acids. Do not skip the yolk, which is where most of these nutrients are concentrated.
For safety, be sure to always cook eggs properly before serving them to your baby so that any potential Salmonella bacteria are destroyed. Scrambled eggs, omelets, and frittatas are properly cooked when no visible liquid egg remains, and any fried eggs you serve should have thickened yolks and whites that are completely set.
Palmar grasp: Serve hard-boiled eggs quartered lengthwise into four vertical wedges, or strips of omelet, fried egg, or quiche measuring ½ inch by 1 inch by 3 inches.
Pincer grasp: Cut quiche, omelets, or hard-boiled, scrambled, or fried eggs into bite-size pieces about 1 square centimeter in size.
